468 Calorie Brinner (Breakfast for Dinner)


(Makes 3 Serves)


  • 350g Rindless Short Cut Bacon

  • 1 Cup Self Raising Flour

  • 1 Tsp Baking Powder

  • 1 1/4 Cups Butter Milk

  • 1 Tsp Vanilla Essence 

  • 4 Large Eggs

  • Cooking spray

  • Sugar Free Maple Syrup 

  • Salt & Pepper


  1. Preheat oven to 175C / 350F. 

  2. Place the bacon in a single layer on a greaseproof paper lined baking sheet. Cook in the over for 20 minutes or until it has reached desired level of crispiness. Should be just enough time to make the pancakes & eggs. 

  3. For the pancake batter, place the flour, baking powder, buttermilk, vanilla and 1 of the eggs in a mixing bowl or jug. Use a fork to carefully mix just enough until all the ingredients are incorporated. Do not over-mix, you still want a few lumps in the batter. Over-mixed pancake batter leads to gluten development and tough pancakes. 

  4. Heat a non-stick frying pan over medium-high heat and spray with cooking spray. Spoon 1/3 a cup of the batter into the pan and form it into a roughly circular shape. Let it cook on one side until many bubbles form on the top. Flip with confidence and cook on the other side until done. Repeat this with the remaining batter, recipe makes 6 pancakes. 

  5. As you near the end of your pancake cooking, cook the remaining eggs in a small non-stick pan coated with cooking spray over medium-high heat. I usually start the eggs cooking as I cook my 5th pancake.

  6. To make one serve, place 2 pancakes onto a large plate. Add one egg to the side and 1/3 of the bacon (115g when it was raw). Top the pancakes with 2 tbsp / 30ml of sugar free maple syrup. Season the eggs with salt & pepper. Enjoy!
