509 Calorie Bacon & Tomato Pasta

Recipe

(Makes 2 Serves)

Ingredients 

  • 1 small brown onion (approx. 100g)

  • 120g lean rindless shortcut bacon (look for 156 Calories per 100g)

  • 2 garlic cloves

  • 160g dry spaghetti

  • 1 tsp olive oil

  • 1 tbs white wine (alternatively use water or chicken stock)

  • 400g canned diced tomatoes 

  • 20g tomato paste

  • 1/2 tbsp dried oregano 

  • Pinch of chilli flakes (optional)

  • 40g rocket leaves

  • Red wine vinegar 

  • Salt & pepper 

Method

  1. Bring large pot of water to boil to make pasta later

  2. Dice tomato, bacon and garlic 

  3. Add olive oil and bacon to a cold pan, place over medium heat and cook until browned and a lovely fond appears 

  4. Remove bacon from pan and set aside for later

  5. Return pan to heat and add onions with pinch of salt 

  6. Sweat onions until translucent 

  7. Deglaze pan with wine, scrape up all the fond 

  8. Add garlic and cook until fragrant, about 1-2 minutes

  9. Return bacon to pan

  10. Add canned tomatoes, tomato paste, oregano and chilli flakes. Season with salt and pepper to taste

  11. Reduce heat to medium-low and simmer for 5-10 minutes 

  12. Cook pasta in boiling water per packet instructions

  13. Once cooked, use tongs to add pasta straight from boiling water to pasta sauce in pan. The bit of water that comes with it will help make the sauce 

  14. Combine cooked pasta and sauce in pan

  15. Divide pasta / sauce between two plates 

  16. Divide rocket between the two plates and add a small splash of red wine vinegar to each
